INTRODUCTION OF COURSE
Food hygiene refers to the handling, preparation, and storage of food in ways that prevent food-borne illness and ensure that food is safe to eat. For those working in health, social care, or catering environments, understanding food hygiene is critical to protecting vulnerable individuals from the risks of contamination, food poisoning, and allergic reactions. This course provides essential knowledge on how to maintain high standards of food safety in any setting.
TRAINING COURSE CONTENT
This Food Hygiene training course provides a thorough understanding of:
✅ The importance of food hygiene in health and social care settings
Learners will explore why food hygiene is vital for protecting health, especially when working with vulnerable groups such as the elderly, children, or those with weakened immune systems. This section highlights the potential consequences of poor food hygiene and the impact on individuals and organisations.
✅ The legal framework for food hygiene and safety
This section explains the key laws and regulations that govern food hygiene, such as the Food Safety Act 1990, Food Hygiene Regulations 2006, and requirements under HACCP (Hazard Analysis and Critical Control Points). Learners will understand their legal duties and the standards they must meet.
✅ Understanding food contamination and food-borne illnesses
Learners will be introduced to the different types of food contamination — biological, chemical, physical, and allergenic — and how these can lead to food-borne illnesses. This section covers common food-borne pathogens (such as salmonella and E. coli) and the symptoms and risks they pose.
✅ Personal hygiene and its role in food safety
This part focuses on the critical role personal hygiene plays in preventing contamination. Topics include correct handwashing techniques, the use of protective clothing, dealing with cuts and wounds, and when staff should not handle food (e.g. when unwell).
✅ Safe food storage, preparation, and handling
Learners will study how to store food safely, including temperature controls for refrigeration and freezing, stock rotation (FIFO – First In, First Out), and labelling. This section also covers cross-contamination prevention, safe defrosting, and correct cooking temperatures.
✅ Cleaning and disinfecting work areas
This section covers the importance of maintaining clean work environments, cleaning schedules, and the correct use of cleaning and disinfection products to prevent the spread of harmful bacteria.
✅ Allergen awareness and managing dietary needs
Learners will explore how to identify and manage food allergens, the importance of accurate food labelling, and how to safely provide food for individuals with dietary requirements or allergies.
